Introduction

Centre of Food Science and Technology was established in 2008. The Centre has one pilot plant comprising five units like - Milk Processing, Fruits & Vegetable Processing, Niro Spray Dryer, Retort Machine and packaging. The centre has also latest Laboratories having all types of equipments to analyze the quality attributes of food products.

The major research areas of Centre are viz Dairy Technology, Functional and nutraceutical technology, fermentation technology, instant foods, fruit candy, coarse cereals in bread and cookies production and agricultural waste management to produce enzymes and metabolites. The centre has established the ICAR sponsored Centre of Advanced Faculty Training (CAFT) in Food processing. The centre has seven MoU with national and international academic institution and food Industries like ICAR-Central Potato Research Institute, Indian Institute of packaging, DSM, etc. The centre has opened the Association of Food Scientist and Technologists (India) –Varanasi chapter in January, 2017.
